Frisceu

Crispy on the outside but soft and fluffy on the inside, Genoese Frisceu or Culli are a delicacy not to be missed by anyone visiting Genoa, the superb city whose flavours and tastes seduce the soul and palate of all.


These savoury fritters are one of the oldest dishes of Genoese gastronomy. You can enjoy them as an aperitif or snack to savour while strolling through the narrow streets of Genoa. They can be served with different ingredients such as lettuce, rosemary, oregano, chives or codfish.

Procedure

Place the flour, salt or sugar and baking powder in a bowl. Mix the contents with a little cold water to form a smooth thick cream without lumps; slowly add all the water. Having prepared the batter, put the diced ingredients (vegetables or fruit) into the bowl a little at a time. With a spoon, take one piece at a time and place it in a tall pan with the oil already boiling. Put as many pieces as you need to cover the entire surface of the oil in the pan. When the fritters are golden brown, remove them from the oil with a slotted spoon and place them on a plate covered with paper towels.

  • 100 grams of flour
  • 125 ml sparkling water
  • 1 sachet of instant yeast
  • salt
  • oil for frying
