A tasty dish, scented by the intense flavor son of the Genoese culinary tradition. The simplicity of the ingredients, the care and preparation make this dish a real masterpiece of Mediterranean cuisine. 
The sardines, blue fish with a strong taste, are cleaned and opened like a book, then stuffed with a crumb of bread soaked in milk, cheese, parsley, garlic and eggs.

Proceeding:

Remove the head, the entrails and the central bone to the sardines and put a few minutes on a cutting board inclined to pour. Prepare the filling with eggs, bread crumbs kept in milk for a few minutes and well squeezed, cheese, oregano or marjoram, parsley and garlic clove. Salt and mix everything with a little oil.
Grease a pan and arrange the sardines gently on the bottom, covering them with the filling evenly. Sprinkle with a drizzle of oil, sprinkle with breadcrumbs and put in preheated form to 180° for about twenty minutes.

  • one kilo of sardines
  • 2 eggs
  • 50 grams grated parmesan cheese
  • one teaspoon of oregano or marjoram
  • a clove of garlic
  • two tablespoons chopped parsley
  • crumb of a sandwich wet in milk
  • half a glass of extra virgin olive oil
  • breadcrumbs
  • extra virgin olive oil
  • salt to taste
