Proceeding

Peel the chestnuts, boil them so that they become very soft and peel them (ùggio). Pass the chestnuts through a sieve or mash them into a puree. Collect the mixture in a saucepan, add some Rhum, sugar, vanilla and water. Cook for about 40 minutes, until the jam is straightened.

Ingredients:

  • 1,5 kg of chestnuts
  • 1 kg of icing sugar
  • 1 vanilla bean
  • a bit of Rhum
